Kombucha is a fermented, non-alcoholic, lightly sparkling tea beverage that has become increasingly popular worldwide in recent years. Its growing popularity is due to its refreshing sweet-and-sour taste and the presence of numerous beneficial micronutrients.
Kombucha is produced by fermenting sweetened tea using a symbiotic culture of bacteria and yeast (SCOBY), often referred to as the “mother” or “tea mushroom.” The traditional brewing process can take up to four weeks. During fermentation, organic acids, beneficial bacteria, vitamins, and antioxidants are produced. The live bacteria are considered probiotics, which is another reason for the drink’s popularity.
Kombucha is believed to have originated in China, where it has been traditionally consumed for over 2,000 years.
